I’m debating whether to just keep the reservations for now and see how it goes, or cancel at least one place and leave more time between appointments I booked them 1 hour and 30 minutes apart...

항정살살이 An hour and a half seems fine, and popular places always have a lot of people, so there’s nothing you can do.. especially if it’s Saturday, it probably won’t just be Thank You; other places will have quite a lot of people too. If you can, just go to all of them for now!
